Hello Kenji,

This is the first time I have ever contacted somebody I did not know personally or at least a friend of a friend. I enjoy cooking and eating, and am much impressed by you and your articles. Started to read your hamburger recipes, and went into your homepage. I am a large grilled burger guy but have been trying your "Sliders" and "Ultimate Single Person Hamburger approaches. Found both recipes excellent and has me re-thinking my tastes in burgers. Thanks for challenging my taste buds and thinking of burgers. I flipped the "sliders" where it appears you do not. Did I interpret your article correctly. If not flipped the under the cheese part of the burger would be a bit raw and mussy, no?

New fan from Shanghai.

Saki

P.S. My name and location may be confusing you, like when I first read your name. I am an Nissei working in Shanghai with a Japanese family living in Japan, BBQing Burgers on a Balcony overlooking the Suzhou Creek. Keep up the great work.
