My favorite non-veg food is shaahi kabaab. It has what it takes to be a good one.

I actually had quite a happy accident a while ago when I discovered a package of wings in the freezer that had experienced very superficial freezer burn, i.e., extreme moisture loss. Just looking at the way the raw skin had become semi-translucent started to get my hopes up. And, as I had hoped, they crisped up marvelously.

That said, relying on freezer burn seems like a difficult process to control and/or plan for.

These were delicious!

We tasted some at noon Super Bowl Day -- just to be sure they were okay. I used (premium aluminum-free) Rumford baking powder.

As my husband said, they look as crispy as they taste. And we loved half unsalted butter and half Frank's.

Thanks!
